Ingredients
- 1 can hominy
- Whatever veggies you have ie: red, green, yellow, orange peppers, onion, zucchini, etc
- Tortillas shells
- Long Grain Wild Rice
Instructions
- In a skillet heat EVOO
- Add hominy and cook for about 4-5 minutes
- Add in the rest of the veggies
- Remove from skillet
- Add a little more EVOO to skillet and grill/heat up tortilla shell
- Fill with veggies and serve
- Rice: follow instructions on box

The kiddos loved loved loved the rice! Definitely a make again in our house! The hominy in the quesadilla takes it from being good to amazing! I simply love hominy!
