Veggie Quesadilla with Long Grain Wild Rice

Ingredients
  • 1 can hominy
  • Whatever veggies you have ie: red, green, yellow, orange peppers, onion, zucchini, etc
  • Tortillas shells
  • Long Grain Wild Rice
Instructions
  1. In a skillet heat EVOO
  2. Add hominy and cook for about 4-5 minutes
  3. Add in the rest of the veggies
  4. Remove from skillet
  5. Add a little more EVOO to skillet and grill/heat up tortilla shell
  6. Fill with veggies and serve
  7. Rice: follow instructions on box

The kiddos loved loved loved the rice! Definitely a make again in our house! The hominy in the quesadilla takes it from being good to amazing! I simply love hominy!
