Cowboy Caviar Black Bean Salad

Cowboy Caviar or black bean salad, is a healthy side dish that is packed with colorful vegetables. It makes a great salsa, dip, or salad for your parties or picnics! Cowboy Caviar is super portable, holds up well, even in the heat and will always taste delicious! Just serve it with a bag of tortilla chips and you are good to go! Cowboy Caviar is naturally vegan and gluten free.

We had my son’s 5th birthday party this past weekend with a PJ Masks theme. I invited his entire preschool class over and their parents to our house to help us celebrate.

Because being an adult and going to a kid birthday party is always SO MUCH FUN (said no parent ever.) I wanted to have food and drinks to help ease the whole awkwardness of being at a party and not knowing the other guests. If it looks like you’re busy eating then it helps minimize the attention given to you as if you’re just sitting/standing there by yourself….hahaha! I may or may not be speaking from experience!

Cowboy Caviar Black Bean Salsa Dip

I served pizza and a few kid friendly finger foods that my birthday boy picked out. I also served Cowboy Caviar as a side dish. In my opinion, this is one of the easiest, most affordable and certainly most delicious side items you can serve at a party or picnic.

Cowboy Caviar is super portable, holds up well, even in the heat and will always taste delicious! Just serve it with a bag of tortilla chips and you are good to go!

Cowboy Caviar Black Bean Salad
Recipe Type: Side dish, appetizer

Ingredients
  • 1 can whole kernel corn, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 package cherry tomatoes, diced in quarters
  • 1/2 red onion, chopped
  • 1/2 bunch cilantro, chopped
  • 1/8 c lime juice
  • 1 tsp cumin
  • salt and pepper to taste (the salt dramatically changes the flavor of the cowboy caviar – the more the better!)
  • tortilla chips
Instructions
  1. Combine all ingredients in a bowl and serve with tortilla chips
  2. Enjoy!
