Day 4: Eating Vegan

Day 4 went really well. The meals were decent (although Lover Boy said dinner wasn’t good…haha!) I really need to find more “manly” vegan dishes because so far his favorite dish this week was the Fried Eggplant with Spaghetti yesterday which he said in a normal week would be the worst meal I made. Poor guy! So any suggestions would be greatly appreciated!!

Breakfast:

Leftover Baked Oatmeal with Strawberries, Banana & Chocolate

Lunch:

Sauteed Veggies Over Spaghetti

Dinner:

Roasted Asparagus Over Bowties with Balsamic
