Chia seeds are all of the rage as of lately – and I have to be honest, I really didn’t know what they were until about a year ago when I decided to buy a bag of the little poppyseed looking seeds at my local grocery store. I remember having a conversation with my sister one day and somehow we got to talking about this mysterious new food craze and we died laughing about how we thought they were called “chee-ah seeds” … like the Chia Pets from back in the day! We have since refined ourselves, to the point that I sometimes incorporate these little delicious seeds into my meals!

Ingredients
  • 1 c unsweetened vanilla flavored almond milk
  • 1 cup greek yogurt
  • 2 tbs pure maple syrup
  • 1/4 c chia seeds
  • 1/8 tsp salt
  • 3 strawberries, sliced
Instructions
  1. Whisk together almond milk, yogurt and syrup.
  2. Stir in chia seeds and salt
  3. Cover and chill for 8 hours or up to 2 days
  4. Serve with strawberry
