Garden Broccoli & Noodles
A super easy, delicious and nutritious dinner for busy weeknights that the whole family will love!
Before our house was struck by lightning, my kids and I planted a beautiful garden! Our new house had six 4×8 raised planter bed, just like the ones I built at my old house. One of the vegetables we planted was broccoli!
Although I haven’t been tending to our garden the way I had intended to, it still has been pretty bountiful and produced a good bit of veggies, especially the broccoli!
Living Update: So…we just signed a lease on an apartment the other day since insurance “could not find us any temporary housing” {insert massive eye roll} so after 65 days in a hotel, we finally have a place to live while our home is repaired…which will hopefully start in a couple of weeks ?????then it will be a 10-12 month process. ??? Anyway, I picked several bunches of broccoli and brought it back to our apartment along with a few kitchen utensils I picked up from the restoration company and the store and got cooking! My first homemade dinner in over 2 months! It felt so nice to be back in the kitchen!!!

I started by adding a couple of tablespoons of EVOO into a dutch oven and let it warm up.
Next I added in chopped broccoli and tossed it with a fork (my tongs were a total loss and had to be disposed of, wahh!!)
After the broccoli was heated all of the way through, about 3-4 minutes, I added in 1/2 cup of chicken stock and turned the heat to medium to simmer.
I covered the dutch oven and let it simmer while I brought a pot of water to boil and cook spaghetti noodles to al dente.
Once I removed the lid from the dutch oven, I added garlic powder and salt to taste. I let the broccoli cook for another 3-4 minutes with the lid off to help simmer out any excess chicken stock (a little bit is OK to keep because it add great flavor but you don’t want too much liquid!)
I then plated the spaghetti noodles and topped it with the broccoli and grated parmesan cheese.
It was absolutely delicious!!! And couldn’t be any easier to make!!
Even my kiddos loved it…but then again, they absolutely love my Corkscrews Con Broccoli which is fairly similar to this dish, so it was an easy win for me! (but I’ll take it!)
