I start by chopping up the rotisserie chicken into bite-sized pieces so it’s ready to go when the filling comes together. In a large pot, I sauté carrots, celery, and onions in butter until they start to soften—this gives the pot pie its classic flavor base.

Next, I add a little more butter and sprinkle flour over the veggies to create a simple roux. This step helps thicken the filling so it’s creamy and not watery. Once the flour coats the vegetables, I slowly pour in the chicken broth while stirring. The mixture begins to thicken and turn into that rich, velvety sauce we all love in a good pot pie.

Cook the vegetables:

  • In a large skillet or Dutch oven, sauté the carrots, onions, and celery in butter until they become soft and translucent

Add more butter:

  • Once the vegetables are cooked, add an additional ½ stick of butter and let it melt completely

Make the roux:

  • Sprinkle in the all-purpose flour and stir continuously to avoid clumps. Use a fork or whisk to keep the mixture smooth

Add the dairy:

  • Pour in the half-and-half and continue stirring until the filling becomes thick, creamy, and well combined

Prepare the crust:

  • Make your pie crust and place one rolled-out crust into the bottom of your pie dish

Fill the pie:

  • Spoon the warm chicken pot pie filling into the prepared crust

Add the top crust:

  • Place the second pie crust over the filling, crimp the edges, and cut a few vents in the top to allow steam to escape

Bake and enjoy:
