This homemade chicken pot pie is the perfect cozy, from-scratch dinner made easier with store-bought rotisserie chicken. Tender vegetables are cooked in a creamy, savory sauce and tucked inside a flaky homemade pie crust inspired by Julia Child. It’s simple enough for busy weeknights but comforting and flavorful enough to feel special. A true family favorite!

Prepare the chicken:

  • Slice and dice the meat from one rotisserie chicken into bite-sized pieces. I typically use only the breast meat for this recipe

Cook the vegetables:

  • In a large skillet or Dutch oven, sauté the carrots, onions, and celery in butter until they become soft and translucent

Add more butter:

  • Once the vegetables are cooked, add an additional ½ stick of butter and let it melt completely

Make the roux:

  • Sprinkle in the all-purpose flour and stir continuously to avoid clumps. Use a fork or whisk to keep the mixture smooth

Add the dairy:

  • Pour in the half-and-half and continue stirring until the filling becomes thick, creamy, and well combined

Prepare the crust:

  • Make your pie crust and place one rolled-out crust into the bottom of your pie dish

Fill the pie:

  • Spoon the warm chicken pot pie filling into the prepared crust

Add the top crust:

  • Place the second pie crust over the filling, crimp the edges, and cut a few vents in the top to allow steam to escape

Bake and enjoy:

  • Bake at 375°F for about 45 minutes, or until the crust is golden brown and flaky. Let cool slightly before serving
