Open Faced Grilled Cheese
I’ve admitted before that I was a stranger in the kitchen until about 10-11 months ago. I did not grow up helping my mom in the kitchen (except for when we made brownies, chocolate chip cookies or pudding…like every other day!). In college and for our first 3 1/2 years of marriage Lover Boy literally did all of the cooking. It wasn’t that I had no interest, I just completely sucked at 1. following a recipe (still do) 2. had no idea of what went with what 3. quite frankly the time to “waste” preparing something that was just going to … well end up going down the drain to put it nicely 🙂 (Thank goodness I have a new perspective on cooking and feeding my family!)
My extent of cooking was so limited when I did cook. This Open Faced Grilled Cheese recipe is one that my mom made often. It is something that you cannot mess up, even if you try…my kind of recipe! I still love to make these when I need something REALLY quick and easy!

What you need:
-Heat oven to 400 degrees
-Bread, any type will do, even hamburger buns! I used Oatmeal bread for these
-Brick of cheddar cheese, mild or sharp
-Bacon Bits
-Butter (optional)

- Heat oven to 400 degrees
- Butter one side of bread, place butter side down on baking sheet
- Top with shredded cheddar cheese and bacon bits
- Bake until cheese is melted and slighly crispy

You make me laugh and you’re story is totally me too. I hated cooking and I was perfectly fine with eating sandwiches and cereal for every meal. I still am. My husband kept pushing me to cook with him and he taught me so much. I still don’t like to handle meat or cut things, but I’m better. Still, the more simple the recipe, the more likely I am to try it! This is my kind of meal!
