Mini Apples Pies, for the crust lover!

These individual Mini Apple Pies are easy to make using homemade apple pie pilling and store bought pie crust. Fill a cupcake tin and they are the perfect treat for fall, lunchboxes, dessert platters and more! The extra bites of crust will be loved by the crust lover!

I have to admit, my favorite part of a pie is usually the CRUST! The rich, buttery, flaky crust that literally melts in your mouth, yeah, that’s what I’m talking about! Yum!! That’s why I love these Apple Turnovers so much!

Typically I make my own crust for all of my pies using my favorite pie crust recipe, however, since the house fire, I no longer have any of my kitchen appliances, etc. Although you can actually make my favorite crust using a fork, I always make it with a handheld dough/pastry cutter, like this one, without it, I just wasn’t up for making the pastry crust. I cheated and bought a pre-made pie crust.

Lets Make Them Together!

Supplies Needed:

Start by rolling our your pre-made pie crust on a cutting board (I got a little anxious and rolled this out before it was fully thawed, hence the rip in the crust). Using a circle cookie cutter, I cut out 7 circles in each pie crust.

Place the circle pie crusts into a cupcake tin. In a bowl, toss together diced apples, cinnamon and sugar.

Fill the pie crusts with apples and top with second set of circle pie crusts

With the excess pie crust dough, cut & press out fun shapes – I used leaves and acorns!

Once the pies are assembled, place in the oven and bake until golden brown!

Let cool, remove from pan and enjoy!

Equipment

  • Cupcake pan
  • 3 1/2" circle cookie cutter
  • Wilton cookie cutter press embellishments

Ingredients
  

  • 1 apple, large, diced into cubes
  • 1/4 c sugar
  • 1/4 c cinnamon
  • 1 package pre-made pie crust (2 pie crusts)

Instructions
 

  • Preheat oven to 400 degrees F
  • Roll out both pie crusts and cut circles with cookie cutter (7 per crust)
  • Place circles into cupcake pan
  • Toss apples with cinnamon and sugar
  • Place 2nd pie crust circle on top of apples
  • Embellish with cutouts
  • Bake for 15-20 minutes, until golden brown

  1. For the mini pies you put 1/4 CUP cinnamon. Is this wrong?
