Lemon Zest Broccoli

Yesterday one of my fabulous neighbors brought over a bag full of broccoli, spinach and cilantro that she had grown in her garden! I couldn’t have been more excited – 1) for fresh out of the garden veggies 2) that I have such awesome and friendly neighbors! Such a refreshing change from our old neighborhood.

Today I couldn’t wait to cook up the broccoli. I seasoned it with lemon and it was outrageously good!

Start by heating up 2tbs butter and 3tbs EVOO
Add in 2 to 3 grated or minced garlic cloves

Apparently life happened and I forgot to take pictures…

-add in one large crown (about 4 1/2c) fresh chopped broccoli and season with salt and pepper

-cook 8-10 minutes over medium heat until the broccoli becomes bright green and tender

Once the broccoli is done cooking add the juice of 1/2 a lemon
Add in 1/2 of the lemon zest of that same 1/2 slice of lemon
Plate up and serve

If you’re a fan of broccoli I urge you to try this out. If you’re not so sure about lemon and broccoli just cut back on the amount of lemon juice and add more after you taste it.
