Healthy Loaded Baked Potato
I’m working on eating healthy (again) – My little guy (aka Kicking Colt) just turned 3 months old…WAHHHHH!!! Where on earth has the time gone?!? Seriously I want to just stop time, my kiddos are getting way too old way too fast. Speaking of which, my oldest is about to turn 5. Have mercy!! I’m about to freak out…way more shocked that she’ll be turning 5 than I am about turning the big 3-0 at the end of October. (maybe I should start freaking about my own age!!)
So…back to the point, I’m eating healthy. I’ve still got quite a bit of baby weight to loose (where the heck did it all come from?!? YIKES!!) and well, to be honest, I don’t want to be out of shape (aka fat) for my big birthday! ha! So like I said, I’m eating healthy! 🙂
I bought a big bag of Yukon Gold Potatoes at the store today and decided to make a loaded baked potato for lunch – only with a twist…one that excludes all of the yummy gooey cheese and bacon bits that I generally enjoy on a baked potato! I substituted those delicious ingredients for diced tomato – and it was soo good!

- 1 yukon gold potato
- 1/4c diced fresh tomato
- 2tbs sour cream
- 1tbs butter
- salt and pepper to taste
- green onions (optional)
- Cook potato in microwave
- Top with butter, salt and pepper, sour cream and tomato
- Enjoy!
- This would also be delicious with green onions!
