Fall Inspired Couscous & Roasted Peppers
We just rolled into the official fall season and I couldn’t be more excited! The cool crisp air and the colors overwhelm my senses with pure awesomeness! Fall brings back so many amazing memories of all my years spent racing Cross County & Track (10 years to be exact – yikes!)
I had bought a package of red, yellow and orange peppers and decided to make a Fall Inspired Couscous & Roasted Peppers for lunch the other day. It was SO good – the peppers just make it divine!

Cook couscous according to directions on box. Dice onion and peppers.
In a pan heat grapeseed oil (or EVOO). Add onions and cook until translucent Then add peppers and cook until slightly browned.Serve veggies a top the couscous and devour!! 🙂
- grapeseed oil
- onion – diced
- red, yellow & red peppers – diced
- couscous
- Cook couscous according to package
- Heat grapeseed oil in pan
- Add onions and cook until translucent
- Add peppers, cook until slightly browned
- Serve veggies a top of couscous
