Fall Inspired Couscous & Roasted Peppers

We just rolled into the official fall season and I couldn’t be more excited! The cool crisp air and the colors overwhelm my senses with pure awesomeness! Fall brings back so many amazing memories of all my years spent racing Cross County & Track (10 years to be exact – yikes!)

I had bought a package of red, yellow and orange peppers and decided to make a Fall Inspired Couscous & Roasted Peppers for lunch the other day. It was SO good – the peppers just make it divine!couscous
