Step 1: Start by baking your brownies. I used a box of Ghirardelli brownie mix and followed the directions right on the box. Pour the batter into an 9x9 baking dish and bake until done. Let them cool completely in the pan.
Step 2: Once cooled, cut the brownies into three long rectangles. Then, using a sharp knife, cut out triangle shapes from each rectangle to look like little carrots. Gently remove each triangle and place them on a sheet of parchment paper.
Step 3: Scoop some vanilla frosting into a bowl and tint it orange with gel food coloring. Once you’ve got that bright carrot color, spoon the frosting into a piping bag and pipe it onto each brownie triangle in a thick, swirly pattern.
Step 4: Now for the “stems”! Melt your green candy melts in the microwave, stirring every 30 seconds until smooth. Dip the tines of a fork into the melted candy and press it gently onto parchment paper to make leafy shapes. Pop them in the freezer to harden.
Step 5: Once the green chocolate stems are set, gently place one on top of each frosted brownie. And that’s it—you’ve got the cutest little carrot brownies ready to serve!
