Asparagus, Mushrooms and Tomatoes Over Grits
Asparagus, Portabella Mushrooms and Tomatoes topped over buttery grits – simply divine tasting! Quick and easy and super nutritious!
This morning I enjoyed Heaven on a plate! I came home from dropping all of my kiddos off at school and made the most delicious breakfast I have had in a long time! Sometimes I get on super healthy kicks and make good food – I don’t know why I fall off the healthy wagon from time to time, but I do. Life gets busy and taking the little extra time to cook something nutritious isn’t always the easiest option – as sad as that is to admit. Please tell me I am not the only one?!?

I simply cooked grits and topped them off with asparagus, portabella mushrooms and tomatoes sautéed in extra virgin olive. It was simply divine. This dish would work great for any meal really, breakfast, lunch or dinner – or even a side item!
Lets Make It Together!
Simply trim your asparagus and mushrooms and place them in a skillet with extra virgin olive oil, cook until they are softened and browned. Salt and pepper to taste.

While the asparagus and mushrooms are sautéing, cook the grits according to the package. I made 1 1/2 servings (I sure do love me some grits!) I like to put 1 tbs butter in my grits and salt and pepper.

Once the grits and asparagus and mushrooms were done cooking, I spread out the grits on a plate and topped them with the grilled veggies. Next I cut up heirloom tomatoes that I had bought at my local grocer and tossed them on top.

Honestly it was so amazingly good that I literally scarfed them down! I must have looked like I haven’t eaten in weeks! I just couldn’t get enough fast enough! It was THAT good!
At that is it! A super easy, delicious and nutritious dish that took less than 10 minutes to make!
