Shredded Chicken Burritos

Shredded Chicken Burritos

I recently made my very first chicken. For everyone who really knows me this is a huge feat to accomplish. I really am not a fan of chicken. The handful of times we’ve even had chicken as a main course (in 4 years of being married) Lover Boy has always been the one to make it! I used to be totally disgusted by just the sight of uncooked chicken, let alone touch it with a ten foot pole! (I know I’m a little crazy, I must be like the only person in the world -well at least the South- that doesn’t really like chicken!!) So like I said, cooking that chicken a few days ago was a huge milestone! (and I even had 3 bites!!)

We ended up with left over chicken (just my luck!) We really like Mexican style dishes around here so I decided to cook the chicken just like I cooked the beef for my Mexican Tostadas that I recently made. I chose to use beef stock again because I really didn’t want the meat to taste super chickeny. Here’s what I came up with.

Chicken Burritos
Drizzle EVOO in a dutch oven or deep pot with a lid

Take two forks to shred the chicken (it’s OK if it’s not super shredded)

Add coriander, cumin and chili powder (amounts = to your preference). Add in boxed beef stock (enough to cover the bottom). You could use chicken stock if you wanted it to taste like chicken

Add diced jalapenos if you dare! Let cook for about 30 minutes with lid on.

Cook some rice! I used 1c water, 1c beef stock (again you could switch it for chicken stock) and 2c rice

In a pie dish layer refried beans, rice, cheese and salsa

In tortilla shells (I used combo shells -corn & flour- layer with refried beans, rice, cheese, cheese, cheese!!! and chicken (salsa optional)

Roll tortillas and lay over mixture in pie dish. Top with refried beans, cheese and salsa. Bake at 350 degrees until cheese is melted (about 10 min)

Top with fresh tomatoes and cilantro and sour cream (optional) and enjoy!!

This is definitely a make again at our house! …and hopefully a try for you!
