Recipe Inspiration

I was sitting on our front porch enjoying a peaceful morning, drinking my coffee and talking to my friend on the phone when my daughter came outside and asked if I would go to the grocery store for her.

My friend and I joked about how this is always the case…the kids want something and ask us to go get it so we pay for it. HA! I’m going to remember these tactics when I’m old and live with them (because I’ve made them all promise me that they won’t stick me in a nursing home and forget about me!)

Anyway, she asked for frozen spinach, frozen pineapple and apple juice. I didn’t even ask what she was making, I just headed out to the store and picked up the ingredients as well as a can of whipped cream…just in case!

Once I got home, she got busy and made these delicious green smoothies that she say on TikTok.

Can You Taste the Spinach in This Smoothie?

No, you honestly can’t. Before my 13 year old son would drink it, he asked if there was spinach in it…truth be told, my daughter and I told a little white lie so he would drink it. He slurped it down and said it tasted really good!

What Can I Add on Top of a Pineapple Spinach Smoothie?

Whipped cream is a fun option, but you can also sprinkle on salted pumpkin seeds, also called pepitas, and a few chocolate chips. The pumpkin seeds add a salty crunch, while the chocolate chips give the smoothie a little extra sweetness. Use as much or as little as you like.
