We are winding down on our time in NC before our big move to WI so we’ve been soaking up every minute possible with friends. We went to my BFF, Kristin’s house and enjoyed a nice night of BBQ, music discovery and laughs.

Earlier in the day Kristin had a baby shower that she brought her amazing Bean Salad to, and luckily for us, she made a double batch for our family get together. Chips and any kind of salsa is my greatest weakness in life. I physically cannot stop eating them once I start.

So…I plopped myself down and ate an unsightly amount of chips and bean salad…and had zero regret later!

Lets Make It Together!

This is the best, throw together bean salad that marinates over time making it extra tasty!

Begin by dicing peppers, tomatoes and cheese into small pieces (small enough to have a few pieces fit onto a tortilla chip for each bite!) Drain and rinse black beans.

Combine all ingredients into a large bowl and toss.

Pour in 1c balsamic dressing and find the cutest little ferocious helper you can to stir!

Dish up and serve with tortilla chips! I prefer to use the Scoops because they easily hold in the bean salad!

Bean Salad Ingredients

  • 1 can black beans, drained and rinsed
  • 1 red pepper, diced
  • 1 green pepper, diced
  • 1 container cherry sized tomatoes, diced
  • 1 cup mozzarella pearls, cut in half
  • 1 cup balsamic salad dressing
  • 1 tsp salt

Mix all ingredients together and serve with tortilla chips!

This bean salad works great to make ahead and save for later! Just put it in a storage container and refrigerate until ready to serve!
