Easy Easter Bunny Ear Cupcakes Using Marshmallows

With Easter just around the corner, it’s always fun to whip up festive recipes and sweet treats that celebrate the holiday! If you’ve been following along, you know I create a weekly recipe video tutorial for Foodtalk – and this week’s creation might be my cutest one yet.

These Easter Bunny Ear Cupcakes are not only adorable, but they’re also incredibly easy to make thanks to a few clever shortcuts. Using boxed cupcake mix, store-bought frosting, and marshmallows for the ears, you can create a batch of sweet little bunnies that are perfect for Easter parties, school treats, or just a fun afternoon in the kitchen. Let me show you how I made them!

Materials & Ingredients

  • Boxed cupcake mix (and required ingredients: eggs, oil, water)
  • Vanilla frosting (storebought)
  • Large marshmallows
  • Pink sanding sugar
  • Aluminum foil
  • Cupcake liners
  • Muffin tin

Step-by-Step Instructions: Easter Bunny Ear Cupcakes

Step 1: Prep Your Cupcake Mix
Prepare your boxed cupcake mix according to the instructions on the package. Line a muffin tin with cupcake liners.

Step 2: Shape the Bunny Heads
Take three small pieces of aluminum foil and roll each one into a ball, about the size of a marble. Place the balls between the cupcake liner and the muffin tin on three sides to create a rounded triangle or bunny-head shape. Fill each liner about 2/3 full with cupcake batter.

Step 3: Bake
Bake the cupcakes according to the time and temperature listed on the box. Once finished, let them cool completely.

Step 4: Frost the Cupcakes
Spread store-bought vanilla frosting onto the cooled cupcakes.

Step 5: Make the Bunny Ears
Cut large marshmallows in half diagonally. Press the sticky cut side into pink sanding sugar. These will be your bunny ears.

Step 6: Assemble
Gently press two marshmallow ears into the top of each frosted cupcake to complete the bunny look.

Step 7: Serve & Enjoy!
Serve immediately or store in an airtight container until ready to enjoy. These cupcakes are perfect for Easter parties, class treats, or just a fun baking afternoon with the kids!

These Easter Bunny Ear Cupcakes were such a fun and festive treat to make! I love how simple they were—using boxed mix, store-bought frosting, and a few easy tricks like foil shaping and marshmallow ears! They turned out absolutely adorable.

If you’re short on time, you can totally skip the aluminum foil shaping step. Just bake your cupcakes as usual, frost them with vanilla icing, and pop on the marshmallow ears—the result is just as cute and every bit as delicious.

These adorable Bunny Ear Cupcakes were so fun to serve alongside the carrot brownies I made! For the brownies, I baked a regular batch and cut them into triangles to look like little carrots. I tinted some vanilla frosting with orange food coloring and piped it onto each brownie in soft, swirly waves.

To make the green stems, I melted green candy melts in the microwave, then dipped a fork into the melted chocolate and drizzled it onto a piece of parchment paper to create fun leafy shapes. I popped them in the freezer until they hardened, then placed one on each brownie. They turned out so cute and made the perfect Easter dessert combo!

Easter Bunny Ear Cupcakes

Instructions
 

  • Prepare cupcake batter according to the instructions on the boxed mix. Line a muffin tin with cupcake liners.
  • Shape the bunny heads by rolling three small balls of aluminum foil and placing them between the cupcake liner and the muffin tin to form a rounded triangle shape.
  • Fill each liner about 2/3 full with the prepared batter.
  • Bake according to the package directions. Once done, remove from oven and let the cupcakes cool completely.
  • Frost each cupcake with storebought vanilla frosting using a butter knife or spatula.
  • Cut large marshmallows in half diagonally.
  • Dip the cut side of each marshmallow into pink sanding sugar to create the bunny ears.
  • Press two marshmallow ears into the top of each frosted cupcake.
  • Serve and enjoy! Store in an airtight container until ready to serve.
