Pioneer Woman’s Sour Cream Noodle Bake

As many of you know, I love Pioneer Woman. Food Network picked her up and is now going to be hosting a cooking show straight from her ranch…now I just need cable! Recently on PW Cooks she featured a recipe called Sour Cream Noodle Bake. Since noodles are Little Finch’s all-time FAVORITE food I knew I had to try this! LF and I made it and were in love! After making it I had leftover cottage cheese so we made a varied version the next day!

*Heat oven to 350 degrees

Brown 1 1/4lb beef *also boil water and cook 8oz of egg noodles at this time
Pull out a can of regular ol tomato sauce, nothing fancy
Pour over meat and stir in
Season with S&P
And crushed red pepper flakes if you dare…I added about 1/4 tsp so it wouldnt be too hot for LF
In a medium sized bowl combine 1/2c sour cream and 1 1/4c cottage cheese
Season with pepper and 1/2c sliced green onions
Pour in egg noodles and coat with cottage cheese mixture
Pour 1/2 of the noodle mixture into a baking dish
Cover with 1/2 of your meat mixture
Layer with cheese
And then repeat the layers…noodles, meat, cheese. Pop in 350 degree oven until cheese is melted and gooey!
And there you have it!
Devour time!

Next time I host a dinner party this is definitely what’s on the menu! It’s such a quick and easy meal to make. You can make it ahead of time and just throw in the oven when your guests arrive…that way you’re not stuck in the kitchen preparing food and missing out on the fun!

    That looks heavenly!!!! Oh, how I wish I could get my husband to eat cheese. 🙁 I heard PW was getting a show. I think I’ll check it out. I don’t read her blog often b/c it’s soooo much info…more like a website now than a blog, but it sure is cool!
