We’re working on getting settled back in after being in Illinois for 8 days for Thanksgiving. I haven’t gone grocery shopping since we’ve been back because I’ve been to excited decorating for Christmas! (We have 16 22gallon totes, countless number of boxes of decorations that won’t fit in totes, all of the outdoor wreaths, lights and other outdoor decorations that have to be put up…I’m swamped!)
My pantry and fridge is pretty barren so I don’t have much to choose from. However, I do have hot dogs and potatoes! Haha! So I searched Pinterest for a recipe that involved those two ingredients. Here is what I found Cheesy Mashed Potato Hot Dogs.
I will just go ahead and apologize now – we’ve entered “it turns dark way too early” phase so there is no longer any natural light when I’m cooking…so folks just go ahead and get used to the kitchen lights. Sorry I know it’s soooo drabby looking!
Cook your hot dog whoever you prefer. I cooked mine on the stove and then butterflied it.
Top it with homemade mashed potatoes (I used two potatoes, butter, whole milk, sour cream, salt and pepper all to taste, no measuring)
Then I loaded it up with shredded cheese
and crumbled cooked bacon. I then stuck it in the microwave for a few seconds to warm it back up and to help melt the cheese.
And there you have it! I was actually surprised with how much I liked it. Lover Boy loved it…and the kids just ate the hot dogs plain! Oh well! 🙂
