Texas Hash Casserole is a classic comfort food that is an easy to make, delicious meal that includes ground beef, rice, tomatoes, green pepper, onion, chili powder, and cheese on top, baked in the oven.

  • Preheat oven to 350°F
  • in a skillet, brown ground beef
  • add diced onions and cook until translucent
  • add green peppers and cook for 1 minute
  • add chili powder and salt, stir
  • add diced tomatoes, stir. Turn off heat
  • rinse rice in a fine mesh strainer, then add uncooked rice to skillet
  • butter the inside of a CorningWare casserole dish
  • spoon half of the mixture into the CorningWare dish. Sprinkle with cheddar cheese
  • repeat the process; layer the remaining mixture onto the cheese, then sprinkle on more cheese
  • cover with glass lid and bake at 350°F for 1 hour. Remove the lid with 15 minutes left and bake uncovered
