Green peppers stuffed with ground beef, spices, hot peppers and noodles topped with hot pepper cheese. The peppers are stuffed and then baked in the oven until tender until tender.
In a medium pan cook 1lb ground beef – add 1tsp oregano, 1tsp parsley, 1/2tsp chili powder, 1/4tsp garlic, S& P to taste. Once the beef is cooked add 1 1/2c of any tomato/spaghetti sauce you have. I had a Five Cheese sauce that I added
In the meantime cook some small noodles. I always make my peppers with rice, but decided to change it up this time
I have a ginormous bag of these peppers that I’m working on using up – so I pulled out some of the meat/sauce mixture and set it aside for the kids. I then added 5 of these bad boys chopped up. I left in the seeds (the spiciest part)
In a large pot bring water to a boil and par boil gutted peppers…until they are slightly tender with a fork (about 7 minutes)
Add drained noodles to the meat/sauce mixture
Stir into the noodles a large handfull of any ol’ hot pepper cheese you have (ie: jalapeno, etc)
Drain peppers, fill with meat/noodle mixture, top with more cheese and bacon bit. Place in a pyrex dish and bake at 350 degrees until the cheese has melted on top
