These spiced peach goat cheese danishes are made with flaky puff pastry, creamy vanilla goat cheese, and sweet spiced peaches. This easy, not-too-sweet dessert comes together quickly and is perfect for brunch, dessert, or a simple weeknight treat. You can use homemade spiced peaches or canned peaches for an easy shortcut.
Preheat oven to 400°F and line a baking sheet with parchment paper
In a medium bowl, mix together the goat cheese, vanilla extract, and reserved juice from the canned spiced peaches (or canned peach juice) until smooth and creamy
Roll out the thawed puff pastry sheet and cut into 9 equal squares using a pizza cutter. Place on the prepared baking sheet
Spoon the goat cheese mixture onto each square and spread gently, leaving a small border around the edges
Thinly slice the spiced peaches (or canned peaches) and layer them on top of the filling. Lightly sprinkle the tops with granulated sugar, if desired
Bake for 12–15 minutes, or until the puff pastry is golden brown and puffed
