These spiced peach goat cheese danishes are made with flaky puff pastry, creamy vanilla goat cheese, and sweet spiced peaches. This easy, not-too-sweet dessert comes together quickly and is perfect for brunch, dessert, or a simple weeknight treat. You can use homemade spiced peaches or canned peaches for an easy shortcut.

Ingredients
  

  • 1 sheet puff pastry thawed
  • 1 4oz goat cheese log
  • 1 tsp vanilla extract
  • 1/4 c reserved juice from spiced peaches or canned peaches
  • 16 oz spiced peaches drained and thinly sliced
  • 1 tbs granulated sugar optional
  • powdered sugar for dusting

Instructions
 

  • Preheat oven to 400°F and line a baking sheet with parchment paper
  • In a medium bowl, mix together the goat cheese, vanilla extract, and reserved juice from the canned spiced peaches (or canned peach juice) until smooth and creamy
  • Roll out the thawed puff pastry sheet and cut into 9 equal squares using a pizza cutter. Place on the prepared baking sheet
  • Spoon the goat cheese mixture onto each square and spread gently, leaving a small border around the edges
  • Thinly slice the spiced peaches (or canned peaches) and layer them on top of the filling. Lightly sprinkle the tops with granulated sugar, if desired
  • Bake for 12–15 minutes, or until the puff pastry is golden brown and puffed
  • Remove from the oven and transfer to a cooling rack. Once slightly cooled, dust with powdered sugar. Serve warm or at room temperature and enjoy
