  • In a large skillet heat extra virgin olive oil
  • Add in chopped veggies of your choice
  • Season with salt, pepper, red pepper flakes and garlic powder to your liking
  • Cook until tender, not mushy, then remove from skillet
  • Drizzle a little extra virgin olive oil in the skillet and place one tortilla on the bottom of the skillet. Top with vegetables and shredded cheddar cheese Add another tortilla shell on top (like a sandwich) and cook on both sides until cheese is melted and tortilla shells is slightly crispy
