  • Heat the extra virgin olive oil in a Dutch oven over medium heat. Add the chopped sweet peppers, diced shallots and garlic and cook until softened and translucent.
  • Stir in the diced tomatoes and chicken broth.

  • Add the orzo and cook until al dente, about 9 minutes, stirring occasionally.
  • Serve warm and top each bowl with croutons and freshly grated Parmesan cheese.
