Lasagna Soup Recipe

The soup is made with a combination of ingredients that mimic the flavors of a traditional lasagna. These include ground beef, Italian herbs, garlic, onions, and diced tomatoes.

chicken broth
+ 2 cups if you cook the noodles
with
the soup

diced tomatoes

crushed tomatoes

tomato paste

tbs
basil

tbs
oregano

tsp
rosemary

thyme
salt and pepper
to taste

mozzarella cheese
1/2
c
parmesan cheese
1/2

ricotta cheese

lasagna noodles
Instructions
Soup
Heat 1 tbs olive oil in dutch oven, add beef and brown
Add diced onion and garlic, cook until golden brown and fragrant
Add tomatoes and seasonings. Add chicken stock. Cover and bring to a boil, then reduce and let simmer for 30-40 minutes
Lasagna Noodles
Cook noodles in a separate pot, drain and set aside until soup is ready
Cheese Topping
In a bowl, blend the three cheeses together and set aside until soup is ready
Assemble and Serve
Place noodles in bowl and ladle soup over the top. Top with cheese blend and fresh basil. Serve and enjoy!
