Tortilla Strips

  • Preheat oven to 400 degrees.
  • Arrange sliced tortillas on a baking sheet and spray with cooking spray. Bake until crispy (7-8 min). Once done, turn oven heat to broiler temp.

Meat

  • In a small bowl, combine dry spices. Season the meat with salt and pepper and slice into strips and toss in dry rub to coat evenly.
  • Add meat to large skillet with 2 Tbs of hot oil. Caramelize the meat on both sides (a few minutes) and then add 1 bottle beer and let simmer.
  • While meat is cooking heat 2 Tbs in another large skillet. Add veggies and garlic. Once browned add cilantro and juice of one lime. Season with salt and pepper.
  • Combine meat, veggies and tortillas in a large baking dish. Top with shredded pepper jack cheese.

Bake

  • Place in broiler until cheese is melted.

Serve

  • Garnish with juice of 1 lime and sour cream and/or salsa.
