Crock Pot Italian Beef Sandwiches

These make ahead crock pot Italian beef sandwiches are the perfect quick and easy meal for busy school night dinners. Slow cooked in a crockpot all day, they are easy to assemble into sandwiches on the fly. Approved even by picky eaters!

Ingredients
  

Beef

  • 1 3lb chuck roast
  • 1 tbs olive oil
  • 1/3 c soy sauce
  • 1 c Coca Cola not diet
  • 2 cans beef consommé
  • 1/4 c dry minced onions
  • 1 beef bouillon cube
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 large dried bay leaf

Sandwiches

  • hoagie rolls
  • provolone cheese sliced
  • vegetable giardiniera mild or hot, your preference

Instructions
 

  • Heat olive oil in a large skillet and sear chuck roast on both sides until browned. Use a screen to reduce fat splatter
  • While the roast is searing, add the beef consommé, soy sauce, Coca Cola, minced onions, beef bouillon cube, garlic powder, onion powder, dried oregano, salt, pepper and bay leaf in the crock pot
  • Carefully place the hot beef roast and drippings into the crock pot. Cover and turn on high for 6-8 hours, or until the beef is tender and falls apart easily
  • Slice hoagie rolls and fill with shredded beef. Top with a slice of provolone cheese. Place on a baking sheet and heat in the oven at 350°F for 4-5 minutes or until the cheese is melted. Top with giardiniera and serve with a small bowl filled with the au jus from the beef for dipping
