Cilantro Lime Rice

This cilantro lime rice is light and fluffy all while being packed with delicious flavors! Easy to make as a side dish with any Mexican themed meal!

Ingredients
  

  • 1 c long grain rice, basmati rice
  • 2 c chicken stock or vegetable stock
  • 2 tsp olive oil
  • pinch of salt
  • 1 tbs butter
  • 3 tbs lime juice, freshly squeezed
  • 1 zest of 1 lime
  • 1 c cilantro leaves finely chopped

Instructions
 

  • Rinse the rice before cooking it - this helps remove excess surface starch and keeps the rice from sticking together. Rinse in a fine mesh strainer
  • Sauté - Heat up a little oil in a pot and sauté the rinsed rice on medium heat until the rice begins to brown.
  • Add chicken stock to the pot. Bring to a boil and then reduce to a simmer on medium heat, with the lid off of the pot. When the liquid has evaporated by 90%, turn off the heat and cover with the lid and let the rice absorb the flavors.
  • Allow cooked rice to sit for 10 minutes before uncovering and stirring.
  • Add butter, lime juice, cilantro, lime zest and gently toss with fork. Add salt to taste.
