Chia seeds are all of the rage as of lately – and I have to be honest, I really didn’t know what they were until about a year ago when I decided to buy a bag of the little poppyseed looking seeds at my local grocery store. I remember having a conversation with my sister one day and somehow we got to talking about this mysterious new food craze and we died laughing about how we thought they were called “chee-ah seeds” … like the Chia Pets from back in the day! We have since refined ourselves, to the point that I sometimes incorporate these little delicious seeds into my meals!

This Chia Seed Pudding with Strawberries is great for those of you who like to meal plan! Especially if you have a busy morning coming up, this can act as a great breakfast choice! Pack the pudding into portable small twist top lids like these ones and eat it while you’re waiting in car rider line or on your way into the office with these go-gurt like containers.
Here’s the Recipe:
- 1 c unsweetened vanilla flavored almond milk
- 1 cup greek yogurt
- 2 tbs pure maple syrup
- ¼ c chia seeds
- ⅛ tsp salt
- 3 strawberries, sliced
- Whisk together almond milk, yogurt and syrup.
- Stir in chia seeds and salt
- Cover and chill for 8 hours or up to 2 days
- Serve with strawberry
