(heck who am I kidding, I struggle just the same! Sweets and carbs are just out of my control sometimes!!) I’m so excited to share with you today this great recipe I found years ago and have had my family fooled into eating vegetables ever since all while they were thinking they were just eating yummy cookies!

Original post: One of the lessons this week at Little Finch’s preschool is Healthy Eating. When I read that in the parent newsletter on Tuesday I knew I had to make the kiddos our family favorite chocolate chip cookies! They are a spin off of Jessica Seinfeld’s cookies that I featured here a year ago. Since then I’ve tweaked it to be a vegan recipe! (Read more about our Vegan Week here). It was such a huge hit not only for the kids, but for Lover Boy and I as well! I gave the printed recipe to Little Finch’s classmates along with a container full of yummy delicious cookies!
Because these cookies are made without eggs you can eat the entire batter! (my favorite part!!) AND if you use Earth’s Balance butter they are vegan!!!
Lets Make Them Together!
These are all of the ingredients you need (plus applesauce – I forgot it in the picture!). Simple!
Mix everything together with either a hand held mixer or a standup mixer (I used my standup mixer). Scoop out the cookies using a 1″ cookie scoop and placing on a non-stick cookie sheet. These ceramic ones are my faaaavorite cookie sheets! Bake and devour!!
Here’s my handy dandy printable recipe! Enjoy!!
- ¾c light brown sugar
- ¾c soft tub butter (use Earth's Best butter to make them Vegan!)
- ½c unsweetened applesauce
- 2tsp pure vanilla extract
- 1 (15oz) can chickpeas
- 1½c semi sweet chocolate chips
- ¾c raisins (optional)
- ¾c walnuts or pecans (optional)
- ½c cranberries or cherries (optional)
- 2c all-purpose flour
- ½c old-fashioned oats
- 1tsp baking soda
- ¼tsp salt
- ) preheat oven to 350 degrees
- ) in a large mixing bowl beat the sugar and tub butter until smooth
- ) beat in applesauce and vanilla
- ) drain and rinse chickpeas. In a food processor rough chop chickpeas (just a few pulses)
- ) add chopped chickpeas, chocolate chips, flour, oats, baking soda, and salt to mixture and beat on low speed until a thick dough forms
- ) drop the dough by the tablespoon onto baking sheets about 2” apart
- ) bake until slightly golden, 10-12 minutes

-chickpeas are loaded with the B vitamin folate. One cup of chickpeas meets more than 70% of a woman’s daily folate needs and almost 50% of the daily needs of a pregnant or nursing woman!
-chickpeas help reduce the risk of heart disease, diabetes and cancer
